Ingredients:
๐โข 1 cup quinoa
๐ฐโข 2 cups water
๐ฅโข ยผ cup diced cucumber
๐ซ โข ยผ cup diced red bell pepper
๐ซ โข ยผ cup chopped yellow bell pepper
๐ฅ โข ยผ cup diced carrots
๐ซ โข ยผ cup chopped black olives
๐ง โข 1 cup crumbled feta cheese
๐ซโข 3 tbsp. olive oil
๐โข 3 tbsp. lemon juice
๐ง โข Salt and crushed black pepper
Instructions: –
โข Add water and washed quinoa to a large saucepan. Bring to a boil, then reduce the heat to low and cover. Simmer until liquid is evaporated, about 15 minutes. 5 minutes after cooking, fluff the quinoa with a fork. Let cool.
โข In a big bowl, combine cooked quinoa, cucumbers, bell peppers, carrots, black olives, and crumbled feta cheese. Combine the olive oil, lemon juice, salt, and pepper with a whisk. Pour mixture over quinoa and toss to coat. Refrigerate until serving time.
