Ingredients:

🍅 • 1 lb. cherry tomato

🥄• 1 tbsp. olive oil

🧂 • ¼ tsp. salt

🍈• 3 large limes wedged

🥥• 4 tbsp. coconut oil

🌶️• 1 tsp. ground chipotle pepper

🎋• ½ lb. fresh asparagus, trimmed

🍤• 1 lb. uncooked shrimp, peeled and deveined

🌿• 2 tbsp. minced fresh cilantro

Instructions: –

• Preheat your oven to 400°F

• Squeeze 4 tbsp juice from limes, reserving fruit. Mix salt, lime juice, coconut oil, and chipotle.

• Arrange the asparagus, tomato, shrimp, and limes you saved on the baking sheet. Pour lime coconut mixture over vegetables and shrimp.

• Bake for about 10 minutes more, or until the shrimp turn pink and the vegetables are soft. Mix in chopped fresh cilantro. Take the pan off, let it cool, then serve over some jasmine rice and enjoy.
