๐Ÿ  โ€ข 1 large, sweet potato, chopped and cubed

๐Ÿง… โ€ข ยฝ cup chopped yellow onion

๐Ÿซ‘ โ€ข 1 cup chopped red bell pepper, seedless

๐Ÿฅ„ โ€ข 3 tbsp. extra-virgin olive oil
