Ingredients: –
๐ โข 1 large, sweet potato, chopped and cubed
๐ง โข ยฝ cup chopped yellow onion
๐ซ โข 1 cup chopped red bell pepper, seedless
๐ฅ โข 3 tbsp. extra-virgin olive oil
๐ฅโข ยฝ tbsp. smoked paprika powder
๐งโข Salt and pepper to taste
๐โข 2 scallions, chopped
๐ฟโข 2 tbsp. chopped fresh dill
Instructions: –
โข Add all the sweet potato hash ingredients to a large bowl and toss well. Then lightly spray a lined baking sheet
โข Cook for 15-30 mins at 400F until crispy & tender
Move to a plate, sprinkle scallions, and chopped dill on top. Serve and enjoy.
