Cast Iron T-bone Steak

I love using my cast iron skillets for most of my steaks

Tonight I made Cheesy Baked Asparagus for a side

Ingredients

  • 2 pound T-bone steak ( about 1 1/2 inches thick
  • Coursely ground black pepper
  • Kosher salt
  • 2 tablespoons oil, like peanut , corn or soy

Step 1

30 minutes before cooking the steak , set aside on countertop and bring to room temperature.

Preheat a large cast iron skillet over medium heat . Lightly brush the steak all over with oil and generously season with salt and pepper. Raise the heat to high, add the steak and cook, turn once , until well browned. Cook for about 5-7 minutes on the first side and about 5 minutes on the second side, for medium rare.

Grab some tongs and hold the steak and sear the edges.

Transfer the steak to a cutting board and cover loosely with tin foil and let rest for 5 minutes.

Cut the tenderloin and strip from the bone , and slice against the grain. Transfer to a serving platter and serve as is , with horseradish , with mustard or garlic butter

Cheesy Baked Asparagus

My favorite way to prepare it as a side : Top it with garlic , heavy cream , parmesan, mozzarella and bake it until the cheese is bubbling, golden and the asparagus is tender.

INGREDIENTS

  • 2lbs. asparagus , stalks trimmed
  • 3/4 cups heavy cream
  • 3 garlic cloves, minced
  • Kosher salt
  • Fresh ground black pepper
  • 1 cup freshly grated parmesan
  • 1 cup shredded mozzarella
  • Red Pepper flakes , for garnish ( optional )

Directions

  1. | Preheat oven to 400*. Place asparagus in a 9″ x 13″ baking dish and pour heavy cream all over the green stalks , then drop and spread the garlic . Generously season with salt and pepper , sprinkle with parmesan and mozzarella and red pepper flakes
  2. | Bake until cheese is bubbly and golden brown and asparagus is tender, about 25-30 mins, and serve immediately
