Easy , Cheesy Pasta & Broccoli dish

Looking for a quick and easy pasta meal ?

I have one for you and it’s one of my favorites !

Looking for a side dish or just a meal on its own ? This recipe is made for either one and can be ready in under 15 minutes!

This meal is so easy and can be cooked all in one pot for easy clean up too .

Im going to just jump right into the ingredients & recipe.

Ingredients :

Not pictured here is the Half and Half

1 box of gluten free penne pasta from my go to brand Barilla

2 cups of broccoli florets

2 cups of baby spinach

1 – 8 ounce bag of shredded cheese ( I used Triple Cheddar )

1/4 cup of pesto from Filippo Berio

2 tablespoons of butter ( I use Smart Balance )

1-2 cups of half and half

salt and pepper

Directons :

You’re going to boil both the pasta and broccoli florets together in a medium size pot . Keep an eye on your pasta though , you don’t want mushy pasta. I prefer my broccoli mushy for this recipe , its like a sauce substitute once everything is mixed together. Once the pasta and florets are cooked to your desire , drain and place back into the pot and set your burner on medium heat. Add in the butter , baby spinach , cheese and gradually add in the half and half . You decide how cheesy and thick you want it . Let the cheese completely melt and baby spinach has cooked down and that’s it!

Add salt , pepper and maybe even some red pepper flakes for a kick .
