Ingredients:
๐ฅโข 3 tsp olive oil
๐ง โข 1 cup chopped onion
๐ โข 2-2 1/2 cups of mushrooms, sliced
๐ โข 1 cup brown rice
๐ซโข ยฝ cup white wine
๐งโข 3 cups water
๐ง โข ยฝ cup grated Parmesan cheese
๐งโข 2 tbsp. butter
๐งโข Salt and crushed pepper to taste
Instructions:
โข Set a pan on medium/high heat and add the olive oil. Once hot, add the diced onion and cook until softened, about 5 minutes. Add the sliced mushrooms and cook until they release their liquid and start to brown, about 8 minutes.
โข Add the brown rice, white wine, and water to the pan, and stir well. Cover with a lid and simmer for about 20 minutes .
โข Then stir in the shredded cheese and butter. Add salt and crushed pepper to taste. Serve the risotto in bowls and enjoy.
