Ingredients:

🥄• 3 tsp olive oil

🧅• 1 cup chopped onion

🍄 • 2-2 1/2 cups of mushrooms, sliced

🍚 • 1 cup brown rice

🫗• ½ cup white wine

💧• 3 cups water

🧀 • ½ cup grated Parmesan cheese

🧈• 2 tbsp. butter

🧂• Salt and crushed pepper to taste

Instructions:

• Set a pan on medium/high heat and add the olive oil. Once hot, add the diced onion and cook until softened, about 5 minutes. Add the sliced mushrooms and cook until they release their liquid and start to brown, about 8 minutes.

• Add the brown rice, white wine, and water to the pan, and stir well. Cover with a lid and simmer for about 20 minutes .

• Then stir in the shredded cheese and butter. Add salt and crushed pepper to taste. Serve the risotto in bowls and enjoy.
