๐โข 4 cups baby spinach
๐งโข 2 tbsp. butter
๐ง โข ยฝ cup chopped onion
๐ง โข 1 tsp. minced garlic
๐ฅ โข ยฝ cup milk
๐ฅ โข 4 tbsp. heavy cream
๐ง โข ยฝ cup cream cheese
๐ง โข Salt and ground black pepper
๐ถ โข Pinch of cayenne pepper
๐ง โข 4 tbsp. grated Parmesan cheese
Instructions: –
โข Boil (about 2 cups) water in a medium pot. When becomes a boil, add spinach and cook for 30 seconds, then remove from the pot and immediately add to the ice water bowl and let it cool completely.
โข Meanwhile, add butter to the non-stick pan and onion for 4-5 mins until softened, then add garlic and cook for about 1 minute. Add the leftover ingredients (except cheese) to the pot and cook for 1-2 mins.
โข Squeeze water from spinach as much as you can, then add to the pot and toss them well. Now add cheese to the pot and heat until cheese melts completely. Remove, serve, and enjoy.
