Ingredients: –
๐ฅ16-18 (400g weight) sea scallops, side muscles removed
๐ง 6 tbsp. chopped shallots
๐ฅ4 tbsp. white wine
๐ฅฌ6 cups freshly chopped baby spinach
๐ฅ2 tbsp. olive oil
๐งSalt and pepper as per taste
Instructions: –
Pat dry the scallops with paper towels. Add 1 tbsp oil to the non-stick sautรฉing pan and sautรฉ sea scallops until golden brown on each side for about 2-3 mins.
Remove the pan and keep it hot. Pour wine into the pan with salt and pepper, bring to a boil, then add chopped spinach and cook until wilted for 2-3 mins over medium heat . Plate the spinach and top with sea scallops and enjoy
