Ingredients: –

๐ŸฅŸ16-18 (400g weight) sea scallops, side muscles removed

๐Ÿง…6 tbsp. chopped shallots

๐Ÿฅ„4 tbsp. white wine

๐Ÿฅฌ6 cups freshly chopped baby spinach

๐Ÿฅ„2 tbsp. olive oil

๐Ÿง‚Salt and pepper as per taste

Instructions: –

Pat dry the scallops with paper towels. Add 1 tbsp oil to the non-stick sautรฉing pan and sautรฉ sea scallops until golden brown on each side for about 2-3 mins.

Remove the pan and keep it hot. Pour wine into the pan with salt and pepper, bring to a boil, then add chopped spinach and cook until wilted for 2-3 mins over medium heat . Plate the spinach and top with sea scallops and enjoy
