Ingredients:

๐Ÿฅ„โ€ข 3 tsp olive oil

๐Ÿง…โ€ข 1 cup chopped onion

๐Ÿ„ โ€ข 2-2 1/2 cups of mushrooms, sliced

๐Ÿš โ€ข 1 cup brown rice

๐Ÿซ—โ€ข ยฝ cup white wine

๐Ÿ’งโ€ข 3 cups water

๐Ÿง€ โ€ข ยฝ cup grated Parmesan cheese

๐Ÿงˆโ€ข 2 tbsp. butter

๐Ÿง‚โ€ข Salt and crushed pepper to taste

Instructions:

โ€ข Set a pan on medium/high heat and add the olive oil. Once hot, add the diced onion and cook until softened, about 5 minutes. Add the sliced mushrooms and cook until they release their liquid and start to brown, about 8 minutes.

โ€ข Add the brown rice, white wine, and water to the pan, and stir well. Cover with a lid and simmer for about 20 minutes .

โ€ข Then stir in the shredded cheese and butter. Add salt and crushed pepper to taste. Serve the risotto in bowls and enjoy.
