Ingredients: –

1/3 cup plain Greek yogurt

2 tbsp. maple syrup

2 large eggs, separate the parts

1 tbsp. melted butter

5 tbsp. coconut oil

ยฝ tsp. baking soda

Pinch of salt

Instructions: –

Add yogurt, maple syrup, egg yolk, and melted butter in the large bowl. Mix well until the elements turn into a smooth form. Add coconut oil in portions and beat well, then add baking soda and mix until soft batter dough produces.

Beat the white eggs in the other bowl until a smooth and foamy form appears.

Mix the egg white with the soft batter and mix again to combine well.

Grease the non-stick pan lightly with cooking spray. Spoon batter (about 3 tbsp for each) into the greased pan and cook for 2 mins. Then turn the pancake and cook more for 1 minute.

Repeat with the leftover batter until all is done. Serve with butter and maple syrup (optional), and enjoy.
