Ingredients: –
๐ฅ 2 large eggs
๐ฅ1 tsp. extra-virgin olive oil
๐ฅฌ1 cup finely chopped spinach
๐ง 2 tbsp. grated cheddar cheese
๐ฟ1 tsp. chopped fresh dill
๐ 4 grape tomatoes, sliced
๐1 tsp. Finely sliced green onion
Salt and black pepper as per taste
Instructions: –
Crack eggs into the medium bowl and add chopped spinach, grated cheddar cheese, chopped dill, salt, and pepper. Beat well until the ingredients combine well.
Put the non-stick omelet pan over medium heat and drizzle the oil. Pour the omelet mixture into the pan and stir for a while, then leave for 3-4 mins until the bottom is cooked completely. Now flip and cook for 2-3 mins more until all is done.
Remove the omelet to the pan, top with sliced grape tomatoes, and sprinkle chopped green onion. Sprinkle salt and freshly ground pepper, serve and enjoy
