Ingredients: –

๐Ÿฅ„1 tbsp. olive oil

๐Ÿซ‘1 red bell pepper, cored and chopped

๐Ÿฅฌ2 cups chopped baby spinach

๐Ÿ„ยฝ cup chopped mushrooms

๐Ÿง‚ยฝ tsp. salt

๐Ÿง‚ยผ tsp. ground black pepper

๐Ÿฅš8 large eggs, lightly beaten

๐Ÿฅ› ยฝ cup unsweetened almond milk

๐ŸŽ‹4 spring onions, sliced

๐Ÿง€2 tbsp. grated cheese

Instructions: –

Preheat oven to 400F . Heat oil in the oven-safe pan and fry veggies with salt and pepper. Cook for 2-3 mins or until softened.

Add beaten eggs with milk and stir well.

Place the oven-safe pan in the oven and bake for 21-25 mins. Then remove, sprinkle cheese, cool completely, slice frittata, serve and enjoy
