Ingredients:

๐Ÿ„ โ€ข 2 1/2 cups of mushrooms

๐Ÿง„ โ€ข ยฝ tbsp. minced garlic

๐Ÿฅ„โ€ข 3 tsp. olive oil

๐Ÿฅฌโ€ข 2 cups of kale

๐Ÿฅš โ€ข 4 large eggs

Instructions: –

โ€ข Add oil to the large non-stick pan, put the pan over medium heat, and cook the garlic for 1 minute. Add mushrooms and sautรฉ until they are soft. Add kale and sautรฉ until kale has gone limp, then add salt and pepper.

โ€ข Now add eggs in but do not scramble , just let them cook on top slowly for 2-3 mins ( over easy eggs ) . Then, put the lid back on and cook for another 2-3 mins. Remove the pan, serve hot with toast , and enjoy.
