Ingredients:
๐ โข 2 1/2 cups of mushrooms
๐ง โข ยฝ tbsp. minced garlic
๐ฅโข 3 tsp. olive oil
๐ฅฌโข 2 cups of kale
๐ฅ โข 4 large eggs
Instructions: –
โข Add oil to the large non-stick pan, put the pan over medium heat, and cook the garlic for 1 minute. Add mushrooms and sautรฉ until they are soft. Add kale and sautรฉ until kale has gone limp, then add salt and pepper.
โข Now add eggs in but do not scramble , just let them cook on top slowly for 2-3 mins ( over easy eggs ) . Then, put the lid back on and cook for another 2-3 mins. Remove the pan, serve hot with toast , and enjoy.
