Ingredients:

๐Ÿซ˜โ€ข 12 oz. chorizo sausage, casings removed

๐Ÿง…โ€ข ยฝ cup chopped onion

๐Ÿ โ€ข 2 sweet potatoes, peeled and cubed

๐Ÿง„โ€ข 1 tsp. garlic powder

๐Ÿ‚โ€ข 1 tsp. cumin

๐Ÿˆโ€ข 1 tbsp. fresh lime juice

๐Ÿง‚โ€ข Salt and crushed black pepper

๐Ÿฅšโ€ข 5 eggs

Instructions: –

โ€ข Cook the chorizo for four minutes over medium-high heat in a large skillet. Transfer with a spoon to a bowl and set aside. Keep the rendered fat in the pan. Reheat the skillet over medium heat, then add the onions.

โ€ข Stir often for approximately 3 minutes or until golden and tender. Add the sweet potato, garlic powder, and cumin and simmer for five minutes.

โ€ข Remove from heat, mix in lime juice, and season with pepper and salt. In a nonstick pan coated with cooking spray, cook the eggs sunny side up or over easily. Serve the breakfast hash with an egg on top
