Ingredients:
๐ซโข 12 oz. chorizo sausage, casings removed
๐ง โข ยฝ cup chopped onion
๐ โข 2 sweet potatoes, peeled and cubed
๐งโข 1 tsp. garlic powder
๐โข 1 tsp. cumin
๐โข 1 tbsp. fresh lime juice
๐งโข Salt and crushed black pepper
๐ฅโข 5 eggs
Instructions: –
โข Cook the chorizo for four minutes over medium-high heat in a large skillet. Transfer with a spoon to a bowl and set aside. Keep the rendered fat in the pan. Reheat the skillet over medium heat, then add the onions.
โข Stir often for approximately 3 minutes or until golden and tender. Add the sweet potato, garlic powder, and cumin and simmer for five minutes.
โข Remove from heat, mix in lime juice, and season with pepper and salt. In a nonstick pan coated with cooking spray, cook the eggs sunny side up or over easily. Serve the breakfast hash with an egg on top
