Ingredients:

๐ง โข ยผ cup chopped onion
๐ซโข ยฝ cup chopped red bell pepper, diced
๐ถ๏ธโข 2 tbsp. diced jalapeno
๐ฅโข 4 eggs
๐ฅโข 2 tbsp heavy cream
๐งโข Salt and crushed pepper to taste
๐งโข ยผ cup shredded cheddar cheese
๐ซโข 4 gluten-free corn tortillas
Instructions:
โข Put a non-stick skillet over medium-high heat, and cook the ground sausage until browned. Drain off any excess fat. Add chopped onion, red bell pepper, and jalapeรฑo to the skillet and cook until softened.
โข In another bowl, beat the eggs with heavy cream. Pour the egg mixture into the skillet and cook until the eggs are cooked. Add salt and pepper to taste. Stir in the shredded cheddar cheese until it is melted and evenly distributed.
โข Heat the corn tortillas in the microwave or in skillet for about 30 seconds on each side. Serve the egg and sausage mixture on the warm tortillas.
