Ingredients:
🍚• 1 cup quinoa
🚰• 2 cups water
🥒• ¼ cup diced cucumber
🫑 • ¼ cup diced red bell pepper
🫑 • ¼ cup chopped yellow bell pepper
🥕 • ¼ cup diced carrots
🫒 • ¼ cup chopped black olives
🧀 • 1 cup crumbled feta cheese
🫗• 3 tbsp. olive oil
🍋• 3 tbsp. lemon juice
🧂 • Salt and crushed black pepper
Instructions: –
• Add water and washed quinoa to a large saucepan. Bring to a boil, then reduce the heat to low and cover. Simmer until liquid is evaporated, about 15 minutes. 5 minutes after cooking, fluff the quinoa with a fork. Let cool.
• In a big bowl, combine cooked quinoa, cucumbers, bell peppers, carrots, black olives, and crumbled feta cheese. Combine the olive oil, lemon juice, salt, and pepper with a whisk. Pour mixture over quinoa and toss to coat. Refrigerate until serving time.
