Ingredients:
🫘• 12 oz. chorizo sausage, casings removed
🧅• ½ cup chopped onion
🍠• 2 sweet potatoes, peeled and cubed
🧄• 1 tsp. garlic powder
🍂• 1 tsp. cumin
🍈• 1 tbsp. fresh lime juice
🧂• Salt and crushed black pepper
🥚• 5 eggs
Instructions: –
• Cook the chorizo for four minutes over medium-high heat in a large skillet. Transfer with a spoon to a bowl and set aside. Keep the rendered fat in the pan. Reheat the skillet over medium heat, then add the onions.
• Stir often for approximately 3 minutes or until golden and tender. Add the sweet potato, garlic powder, and cumin and simmer for five minutes.
• Remove from heat, mix in lime juice, and season with pepper and salt. In a nonstick pan coated with cooking spray, cook the eggs sunny side up or over easily. Serve the breakfast hash with an egg on top
