Ingredients:

🍄 • 2 1/2 cups of mushrooms

🧄 • ½ tbsp. minced garlic

🥄• 3 tsp. olive oil

🥬• 2 cups of kale

🥚 • 4 large eggs

Instructions: –

• Add oil to the large non-stick pan, put the pan over medium heat, and cook the garlic for 1 minute. Add mushrooms and sauté until they are soft. Add kale and sauté until kale has gone limp, then add salt and pepper.

• Now add eggs in but do not scramble , just let them cook on top slowly for 2-3 mins ( over easy eggs ) . Then, put the lid back on and cook for another 2-3 mins. Remove the pan, serve hot with toast , and enjoy.
