🍠 • 1 large, sweet potato, chopped and cubed
🧅 • ½ cup chopped yellow onion
🫑 • 1 cup chopped red bell pepper, seedless
🥄 • 3 tbsp. extra-virgin olive oil
🥄• ½ tbsp. smoked paprika powder
🧂• Salt and pepper to taste
🎋• 2 scallions, chopped
🌿• 2 tbsp. chopped fresh dill
Instructions: –
• Add all the sweet potato hash ingredients to a large bowl and toss well. Then lightly spray a lined baking sheet
• Cook for 15-30 mins at 400F until crispy & tender
Move to a plate, sprinkle scallions, and chopped dill on top. Serve and enjoy.
