Ingredients: –
🥄1 tbsp. olive oil
🫑1 red bell pepper, cored and chopped
🥬2 cups chopped baby spinach
🍄½ cup chopped mushrooms
🧂½ tsp. salt
🧂¼ tsp. ground black pepper
🥚8 large eggs, lightly beaten
🥛 ½ cup unsweetened almond milk
🎋4 spring onions, sliced
🧀2 tbsp. grated cheese
Instructions: –
Preheat oven to 400F . Heat oil in the oven-safe pan and fry veggies with salt and pepper. Cook for 2-3 mins or until softened.
Add beaten eggs with milk and stir well.
Place the oven-safe pan in the oven and bake for 21-25 mins. Then remove, sprinkle cheese, cool completely, slice frittata, serve and enjoy
