Sauce:
🥄2 tbsp. tamari sauce, gluten-free
🥄2 tsp. rice vinegar
🥄2 tsp. sriracha sauce
🥄1 tsp. cornstarch
Stir fry:
🥑3 tbsp. avocado oil
🍖 2 lb. pork tenderloin, trimmed and cut into strips
🧅 1 large onion, finely chopped
🫑 3 large bell pepper, sliced
🧄 3 tsp. minced fresh garlic
🪵3 tbsp. minced fresh ginger
🥒1 large zucchini, diced
Instructions: –
Mix the sauce ingredients in a small bowl and set aside. Add oil to the non-stick frying pan.
Add onion and sauté for 2 minutes. Add pork strips and sauté until meat is cooked completely about 6-7 mins.
Add pepper slices with minced ginger and garlic. Sauté for 1 minute. Pour in the sauce and diced zucchini and cook until the veggies are softened and the sauce thickens, about 6-7 mins.
Remove to the plate and serve with rice
